Red Queen Crumpets Pair Nicely with Knave of Apple Spice

We’ve all heard of the crumpet, but how many of us have actually had one with a cup of tea? Traditionally a baked item from the United Kingdom, bring this item to your own table paired with our favorite Positively Tea Company’s Apple Spice Tea (Black Tea). The taste of apple and spices in the black tea meld fantastically when paired with a wonderful crumpet, can you believe it!?!  We like these so much we call them our Red Queen Crumpets!!

What Are Crumpets?

Crumpets are English griddle cakes made from flour, milk/water and yeast and are traditionally eaten for breakfast or with afternoon tea.  They’re soft and somewhat spongy in texture and their crowning feature are the dozens of tiny holes that dot the surface, allowing whatever you spread on them to soak down into them, making each and every bite an unforgettable one.

What Is the Difference Between a Crumpet and an English Muffin?

These are sometimes confused and while it is true that they are both cooked on a griddle, they are distinctly different.   English muffins are more like bread rolls; they’re doughy, heavier and bread-like.  English muffins are cut in a half for serving.

Crumpets are lighter and spongier in texture both as a result of different ingredients,/ratios as well as technique and the dual rising method that gives them a different texture, consistency and appearance (specifically the dozens of tiny holes that dot the top surface).  Unlike English muffins, crumpets are not split in half for serving.  Instead the butter, honey, jam, etc and spread right on top of the toasted crumpet.

Cook: 20 minutes

Servings: 24 servings

 

Ingredients

  • 1 1/2 cups milk
  • 3 1/2 cups all-purpose flour
  • 1 1/4 teaspoons active dry yeast
  • 2 teaspoons sugar
  • 1 1/2 cups water (lukewarm)
  • 1 teaspoon salt
  • 1 teaspoon baking powder

Directions

  1. Combine your milk, sugar and yeast and allow the yeast to bubble up and foam.
  2. Add the flour and mix in until the mixture is smooth. Then you’ll want to cover the bowl and set it aside to rise until the mixture has doubled and the batter is bubbly.
  3. Stir together your water and baking soda, then add that to the dough and mix. Then you will let it sit again for about 30 minutes. All of this waiting is to make sure your crumpets will end up with lots of little nooks and crannies for butter and jam.
  4. Heat a griddle or a skillet, and spray with nonstick cooking spray. Place your rings on the griddle, and make sure your rings are sprayed as well so that the crumpets will not stick. Pour your batter into the mold and allow the batter to bubble up and cook for 5-9 minutes.
  5. Use tongs to remove the ring, then flip the crumpet over to cook quickly on the other side, only about 1 minute. Traditionally, crumpets are not cooked on both sides, but I like to cook that second side very briefly.
  6. Serve your crumpets with lots of butter, honey, or jam.  Pair with a cup of the Apple Spice Black Tea!!
