Earl Grey Lemon Loaf Recipe

Hey Tea Lovers,

Nothing beats walking into work in the morning to see a delicious fall themed plate stacked high with delicious baked goods :-).  I know I can get into gear with a light and moist cake-style lemon loaf paired with Harney & Son’s Earl Grey Tea. Cook: 40 minutes

Servings: 8 slices (1 loaf pan)

Ingredients

  • 24 ounces of Harney & Son’s Earl Grey Tea
  • 1/4 cup milk
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 2 teaspoon baking powder
  • 2 large eggs
  • 1 Lemon
  • 1/4 cup vegetable oil
  • 3/4 cup sugar
  • 2/3 cup plain yogurt
  • 1/2 teaspoon salt
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1 1/2 teaspoon Nielsen-Massay vanilla extract

Directions

  1. Preheat oven to 350 deg F. Line the bottom of your loaf pan with a healthy covering of butter.
  2. Place milk in a small saucepan and add the Earl Grey tea into the milk. Heat over low heat, stirring occasionally, until the milk is warm and the tea begins to steep. The milk will turn a rich brown and will smell fantastic. Turn off the heat and set it aside.
  3. In a large mixing bowl, whisk together the two flours, baking soda, salt, cardamom, nutmeg and cinnamon.
  4. In a medium mixing bowl, combine the oil, sugar, yogurt, eggs and vanilla. Squeeze lemon so that as much as the juice as possible gets into the mix. Stir the milk and tea mixture into the wet ingredients.
  5. Pour the wet ingredients into the flour mixture and combine until well mixed.
  6. Pour the batter into the prepared pan.
  7. Bake for 45 minutes or until toothpick in the middle of the loaf comes out clean.
  8. Place on a rack to cool and slice to serve!
