Tea Party Scones

Can you believe some people haven’t enjoyed a scone before?  I know, when I found out some of my friends were missing out, we made another reason to have a tea party! The fancy tea cups, the crazy chairs, your best crazy hat, of course the TEA! Don’t forget to serve a wide variety of savory and sweet treats. We recently shared our favorite recipe for scones and our friends keep asking for more.  Check out these scones and pair with your favorite tea, Tea Bloom’s White Tea.

Prep: 15 minutes

Cook: 10 minutes

Servings: 6-8 servings

Ingredients

  • (2) Cups all-purpose flour
  • (1/2) Cup of sugar
  • (1/4) Cup of baking powder
  • (2) Sticks butter, refrigerator cool and grated
  • (1) Cup buttermilk (or heavy cream)
  • (3) eggs, well beaten
  • (1/4) teaspoon of salt
  • (3/4) cup of blueberries or dried raisins or some other yummy add-in

Directions

  1. Cream butter, lemon peel and lemon juice until light.
  1. Mix the dry ingredients together using a large bowl.
  2. Add in the grated frozen butter. To avoid overly dense scones, work the dough as little as possible. Messy and crumbly is a good thing!
  3. Whisk the wet ingredients together.
  4. Mix wet ingredients and dry ingredients. Mix together, then pour out onto the counter.
  5. Form into a circle and cut into wedges.
  6. Brush with heavy cream or buttermilk.  For extra crunch, a sprinkle of coarse sugar is always ideal!
  7. Refrigerate for at least 15 minutes. Keep scone dough as cold as possible.
  8. Bake at 450 degrees F until golden brown for only 20-25 minutes
  9. Remove to a wire rack to cool.
