Currant Tea Cakes

Everyone loves a mad tea party. The fancy tea cups, the crazy chairs, your best crazy hat, the TEA but don’t forget to serve a wide variety of savory and sweet treats. From finger sandwiches to delicate cakes your tea party is not complete without a scone or biscuit of choice. We recently were turned on to this scrumptious currant cakes by one of our customers and now we can’t help but spread the word, we would also recommend pairing with a oolong fruit tea.

Cook: 10 minutes

Servings: 36 servings

Ingredients

  • (1) cup butter, softened
  • (1) teaspoon grated lemon, rind of
  • (1)  tablespoon lemon juice
  • (1) cup of sugar
  • (3) eggs, well beaten
  • (1-3/4) cups of flour
  • (1/4) teaspoon of salt
  • (3/4) cup of black currants or dried raisins

Directions

  1. Cream butter, lemon peel and lemon juice until light.
  2. Add sugar and cream until light and fluffy.
  3. Add eggs and blend well.
  4. In another bowl, mix flour and salt; gradually add to creamed mixture, beating well until blended.
  5. Stir in currants (or raisins).
  6. Drop by teaspoonful onto greased and floured baking sheet.
  7. Bake at 350 degrees for 10 minutes or until set.
  8. Remove to a wire rack to cool.
